Cinnamon Rolls


This is actually an orange roll recipe I used, so I will give you both versions since the orange rolls are really good too! I can't make them very often because no one here will eat them but me!

Cinnamon Rolls
1/3 c. warm water
1/2 t. sugar
1 T. yeast
Mix the above three ingredients together and let sit (about 15 min.)

Add:
1 c. milk (scalded and cooled a little)
3 T. butter (melted)
1 c. flour
3 eggs
1/2 c. granulate sugar
1 t. salt
Beat the above ingredients along with the yeast mixture then add:
3 c. flour (give or take)

Knead well then put in greased bowl, cover and let rise until double. Punch down and roll out in rectangle about 1/4" thick. This is where you can add different things.

Take anywhere from 1/2 to 1 cube of softened butter and spread on dough then add 1/2 c. brown sugar (give or take) and cinnamon to taste (usually about 1 1/2 - 2 tsp.). Roll dough, pinching the end to the dough and cut 1 1/2 - 2" thick. You can use sewing thread or a sharp knife to cut. Place on greased or lined cookie sheet. Cover and let rise until double. Bake at 375 until done, about 15-20 min. Frost while still slightly warm.

Cream Cheese Frosting
4 oz. cream cheese (softened)
4 T. butter (softened)
2 c. powdered sugar
1 t. vanilla
milk (just to desired consistency)

Orange Rolls
Use above roll recipe. Mix together the following ingredients and then spread on dough:
6 T. melted butter
1/2 c. granulated sugar
zest of one orange (don't zest the white stuff, it's bitter)

Roll up, cut and let rise following the above directions for cooking.

Glaze
1/3 pkg. powdered sugar
juice of one orange
1/3 stick softened butter
milk (add a little at a time until you reach the consistency you want)
