This was a Saturday morning favorite in my family growing up. We would always fight
over who got the corners, since they were the biggest and puffiest!
Preheat oven to 450.
In the following order add ingredients to a large mixing bowl:
- 6 eggs
- 1 cup milk
- 1 cup flour, sifted
- 1/2 tsp salt
Mix together on high power with an electric mixer, scraping sides.
In a 9x13 glass baking dish cut 4 TB butter into squares. Place dish into nearly preheated oven. As soon as the butter is melted and bubbling (careful not to burn!) remove from oven and pour batter into the hot dish and sizzling butter and bake immediately for 20 minutes (oven should be to 450 at this time).
Serve with warm maple syrup, fruit, powdered sugar, or whatever you would like!
Serves 6 (we always had to make two pans of these growing up for the 8 of us!)
*This recipe has to be followed exactly or it won't puff up like it is supposed to. The only alteration I do sometimes is 3 TB butter instead of 4. It still turns out. The original recipe called for 6 TB and that was way too much. We usually blot any excess butter with a paper towel after it's baked. Mmmmm!
