Heavenly Potatoes and Ham

It seems like I always have a lot of potatoes that I need to use up so I am constantly looking for good recipes.  I found this one on allrecipes.com and over 19,000 had saved it as a favorite.  I liked it and changed just a few things. So here is what I did:

  • Ingredients:
  • 2 1/2 pounds red potatoes, cut into bite sized pieces
  • 8 oz sour cream
  • 2 TB melted butter
  • 2 (10.75 ounce) cans condensed cream of chicken soup (healthy request)
  • 1 cup shredded Cheddar cheese
  • 2-3 TB milk
  • 3 TB chopped green or yellow onion (I sautéed the yellow onion before hand)
  • 2 cups cooked, chopped ham (I like the ham steaks at Costco and then pull it apart by hand, which to me, looks better than cubed in this recipe)
  • salt pepper to taste (I only added pepper and thought it was adequate)

  • Topping:
  • 3/4 cups Parmesan cheese flavored bread crumbs (= plain bread crumbs, add parmesan and italian seasonings and garlic powder)
  • I liked adding a little bit more shredded cheddar cheese into the bread crumbs
  • 2 TB melted butter

  • Directions:
  1. Preheat oven to 350. Lightly grease a 9x13 baking dish.
  2. Place cut potatoes in a large pot of water, and bring to a boil. Boil until slightly tender, about 12 minutes. Drain, and transfer to a large bowl.
  3. Mix sour cream, butter, cream of chicken soup, Cheddar cheese, onions, ham, salt and pepper with the potatoes. Spread mixture in the prepared baking dish. Sprinkle with bread crumbs, and drizzle with butter.
  4. Bake 30 minutes.
