Chocolate Frosting and Cup Cake Flags

We were lucky to have Sandi cater Dad's 70th birthday party last weekend. She did an AWESOME job! She didn't forget a single detail. Thanks Sandi! Now, share these recipes with us! And we want you to include your instructions on how to grill the perfect steak (my picture turned out blurry because everyone was in such a hurry to eat! I think Mark has one)

{Cup Cake Flags}
Sandi used cute ribbon glued on to toothpicks on these mini cup cakes. They were so cute and just as tasty. She also told us you could use cute scrapbook paper the same way. I LOVE it!

{Chocolate Frosting}
2 sticks butter (melted)
1 c. cocoa
2 tsp. vanilla
4 1/2 c. powdered sugar
1/3 c. milk

Beat until smooth. You may need a little more or less milk depending on the consistency you want.

Cinnamon Cake

This cake is a lot like a cinnamon roll but a lot easier to make.  We also thought you could substitute the glaze on this with this cream cheese type frosting and drizzle it on the same way.  This cinnamon cake is really yummy served warm with vanilla ice cream!
{Cake batter}
1 cube butter
2 eggs
1 1/2 cups milk
2 tsp vanilla
Mix together, then add:
3 cups flour
1 cup sugar
4 tsp baking powder
1/4 tsp salt
Pour and spread evenly into a greased and floured 11"x17" pan.
Then, on to the
{Cinnamon batter}
1 cube butter, melted
2/3 cup brown sugar
1 TB flour
1 TB cinnamon
Mix and pour on top of {Cake batter} covering it completely.  Next, swirl in both directions with a butter knife.  Bake at 375 for 25 minutes.
While still warm, drizzle with {Glaze}:
{Glaze}
2 cups powdered sugar
2-4 TB milk
1 1/2 tsp vanilla

Strawberry Jell-O Cake

1 box white cake mix
1 small bag frozen sweetened strawberries
1 small pkg strawberry jell-o
1 can strawberry pop
1 8 oz cool whip

Bake cake according to directions and let it cool. Boil pop and add jello. Stir until dissolved. Do not add water to jello. Let jello cool about 10 minutes. Use a fork and poke holes in the cake. With a spoon, pour jello slowly into the cake. The topping is cool whip and however many strawberries to your taste.

I have made other flavors as well. Use sprite instead of strawberry pop.

Sue Nelson's chocolate cake

Sue Nelson’s chocolate cake (she is Aunt Roma’s daughter)

• Just so you know, this is an eggless cake• It has to be stirred with a spoon – a beater will beat out the rising action

Sift together: (I actually didn’t – just put it all in a bowl – but I did stir it together)• 3 Cps flour• 2 Cps sugar• 2 tsp soda• 1 tsp salt• 4 Tbsp cocoa roundedAdd• 2 Tsp vanilla• 1 Cp salad oil• 2 Cp really warm water• Mix the above together (into the flour) with a spoon• Then gently stir in 1 TBSP vinegar STIR WITH A SPOON – don’t be too vigorous – will deflate the soda and vinegar actionBake 350’ 40 – 45 min.

Frosting
Melt in pan on low till melted• 2 Tbsp butter• 2 Tbsp dark Karo syrup (I just use regular)Mix in bowl• 2 Cp Sugar• 3 Tbsp Cocoa• 1 Cp half & half OR Evaporated Milk OR Whipping Cream• Dash of SaltWhen Karo comes to boil, pour other mixture into the middle DON’T TOUCH! Cook between med and med-hi to SOFT, SOFT ball stage (when a little is put in a cup of cold water, it will just barely start to hang together to form a ball). Pour immediately onto cake that has had holes punched all over in it. When cooled, spread whipped cream all over the top just before serving.
