Mark's Chip Dip

Mark's long-awaited chip dip is here!  This is a family favorite for sure!
In a skillet, brown together:
  • 1 to 1 1/2 pounds ground beef
  • 1 pound ground sausage
  • 1/2 onion, chopped
Drain the grease then put into a crock pot with:
  • 1 jar salsa - 24 ounces
  • 2 cans Rotel tomatoes (diced tomatoes with chilis in the can)
  • 1 can Mexican stewed tomatoes
  • 1 can diced green chilis
  • 32 oz Velveeta cheese, cubed
Simmer altogether in a crock pot until warmed through.  Enjoy with your favorite tortilla chips!

Red Robin (copy cat) Fries

Red Robin has the BEST french fries and dipping sauce, in my opinion.
Perfect for summer barbecues.  This dip is GREAT for a burger sauce as well.
This recipe is so simple but SO yummy!

Fries:
Bag of steak fries from the grocery store (not seasoned or battered, just plain)

Bake according to package, we usually cook a little longer.  Season with Seasoned Salt liberally.  I usually season part way through the cooking time and turn the fries over.

Sauce:
1/2 cup mayonnaise
1/4 cup barbeque sauce

Veggie Bars

Spread out 2 (8oz) packages of refrigerated crescent roll dough onto an 18x12 cookie sheet. Bake at 375 for 10-13 min. Let cool.

Mix 6 oz. cream cheese with 1 oz. ranch dressing powder (1 packet). Spread on cooled crescents. Top with shredded cheddar cheese and veggies of your choice.  We loved it with broccoli, cauliflower and carrots (making sure to cut them into very small pieces).  This is oh so good!

Thank you Stacey for sharing this recipe!

Pigs In A Blanket

This isn't really a recipe, but this is an easy, fun, kid food.  I used refrigerated biscuits and five hot dogs.  I cut the hot dogs in half and rolled them up and then pinched the dough together.  You could even roll in a slice of cheese with the hot dog.  Bake according to biscuit recipe, or until golden brown.
Yields 10 little piglets.

Frozen Fruit Cocktail

Mix together:
1/2 cup lemon juice and 1  3/4 cups sugar
Add:
12 medium peaches, sliced
1  2/3 cups crushed pineapple (or 20 oz can)
1  1/2 cups frozen orange juice (diluted)
Freeze in gallon or quart zip lock bags.  When ready to use, partially thaw.  Add sliced bananas and grapes or raspberries or strawberries.  Add 7-up.
Hint: Store in 2 to 3 cup portions in zip-lock bags for ease in thawing and serving.
Make this at the same time you are bottling your peaches!  Yummy!
